Tasting Notes
Picked a little more ripe than the 2004 vintage, the 2005 shows more luscious stone fruits and honey suckle notes which flow onto the palate with more density and ‘gras’, but still has a lingering freshness and subtle acidity.

Cellaring
The 2005 has been made in a more full and rich style compared to more austere 2004, and although not recognised as an aging variety, this wine will give drinking pleasure for the 4+ years.

Viticulture
This fruit is grown from 6 year old vines, in a single vineyard at Kenton Valley, in the northern end of the Adelaide Hills. The vines are planted in clay / loamy soils and the vineyard also has a moderately steep north westerly aspect, resulting in good afternoon sun exposure.

Vinification & Maturation
The fruit was hand picked and then whole bunch pressed, with both the free run and the pressings settled for 24 hours and then racked separately to old French barriques where the juice was then inoculated with one of two different Rhône yeast isolates. Average fermentation temperature was 15.00C. Post fermentation, the barrels were topped and the wine remained on yeast lees with some stirring until being racked prior to bottling. Some malolactic fermentation was detected during maturation and allowed to proceed, but the extent was assessed as minimal. Following sterile filtration the wine was bottled in late August 2005.wine was bottled in September 2005.

Viognier

2005 Cellar-pod - Adelaide Hills

Perhaps because there were only 8 barrels made or because we
were captured by it’s grace and character? One thing we know for sure, this Adelaide Hills Viognier will suck you in, wrap you up and before you know it, this wine have quietly slipped away… and you’ll be left wondering if there is just enough for another Smidge…
